Bacon Salad

No salad is complete without bacon added to it! This salad is really flexible on what you add to it and how much. The secret is in the dressing you are going to add.

Ingredients:

2 cups chicken, cooked and diced
1/2 cup red bell pepper, diced
1/2 carrot, grated
1/8 cup dried unsweetened cranberry
1/2 apple, peeled, cored and shredded
1 green onions, chopped
1 cups red cabbage, finely shredded
1 cups green cabbage finely shredded
2 slices bacon, cooked and crumbled

Dressing:

1/8 tsp. black pepper
ΒΌ tsp. of unrefined sea salt
Juice from 1 lemon
1 tsp. of mustard, preferably brown
3 tbsp. of organic bacon fat
2 tbsp. basil

Directions:

1. Add all the salad ingredients to a large bowl and toss to combine.
2. To make dressing add mustard, lemon juice, sea salt, pepper to a mixing bowl and blend them together.
3. After they are mixed well, pour the bacon fat into the bowl and mix it to create a vinaigrette.
4. Once complete, you can sprinkle the basil on the top of the dressing.
